Over three days of careful work, the dough is slow-leavened for depth of flavour and exceptional texture; each loaf is shaped and scored by hand to preserve its feathery crumb. The topping is a highlight — an icing infused with hazelnut and bitter almond notes, adding a crunchy frangipane-style finish that contrasts beautifully with the soft interior.

Inside, you’ll find around 16 % dried fig embedded in the dough, and 7 % dark chocolate carefully folded into the mix. The icing itself makes up about 12 % of the product, blending egg white, sugar, hazelnuts, peeled bitter kernels and rice flour.
